Letting windows install on its own drive by removing the linux drive (otherwise it will select that drives efi partition), I use systemd boot and I just copied the EFI/Microsoft folder from the windows drive efi partition to the linux efi partition systemd-boot will auto detect it. As for minimal, just use windows 10 ltsc, or windows education and use a debloater tool that is trustworthy (I like winutill).

Ubuntu core would work for this. Is this a security critical setup? Otherwise I don’t see why you would go immutable, if you just want a nice base for hosting containers I’d recommend dietpi running something like casaos (or just plain docker). You can set up auto upgrades pretty easily in dietpi!

Can you recommend some? I’ve been looking at some alternatives like n100 boards but there’s so much choice :/

in the the wikipedia article it seems to use multiple kernels (either a rtos type kernel for iot and wearable devices or the linux kernel + aosp layer for phones, tablets, etc…) seems that in the new next version they will no longer use the linux kernel but their own kernel instead and move away from android entirely (i got that last bit from this article)
