When I am a Gold or Blue, the Host is an absolute noob and dies to falling off an easy jump. If I invade, the host is a god among men all the way at the end game of the DLC using the Taunter’s Tongue all alone and actually is good at PvP.

Well yeah, those are basically two separate groups. There are SOME of the former in the invasion pool but a lot of them will be using seamless co op, which is frankly a far better experience. So all that’s left are the guys that want to be invaded.
Does Seamless Coop block invasions (like if I invaded while having it installed it would work, right)? DS3 had Blue Cipher mod for fixing the crappy multiplayer issues but it was mostly just to keep yourself from connecting to modded players (of which most were just cheating, making it an effective anti-cheat tool). If there was such a thing for Elden Ring I would very much like it.
Seamless co op requires you to play offline from the game’s normal servers. I believe you can enable invasions from other people on your password now but it’s very much choose what you want to deal with
