Isn't the deal with salt in coffee that a tiny amount per cup (like three grains of table salt) will cut the bitterness of crappy coffee, but that's about it?

Salt and Coffee: Not only does salt cut the bitterness of coffee, but it also smooths out the "stale" taste of tank-stored water. I've taken to adding a quarter teaspoon of kosher salt to every 6 tablespoons of grounds. That isn't really enough to taste, but it'll do the trick. And by the way, research has proven that salt is actually better at neutralizing bitterness than sugar.
Salt cancels out bitterness in general. Next time you have grapefruit; try a sprinkle of salt.

I'll add a scoop of coco powder and a dash of cinnamon to my coffee grounds. Gives it a deeper chocolate flavor with a spicy touch. If that's a bit too much, just a dash of either to your coffee cup would do.
I've never thought of mixing something into the grounds. I've tried adding things like nutmeg/cinnamon into coffee never getting good results (gritty!). I'll have to try this technique.

Sometimes I’ll throw a cardamom pod into the cup before making a latte
In November/December I add eggnog to my espresso (either steamed or cold) and top it with nutmeg.

buddy of mine rinses out his espresso cup dregs with cognac
Sometimes I'll add a drop of cognac (Dusse) to a shot of espresso, the smell and flavor is really nice.
A 16 oz Dark Roast Drip Coffee, black, and 1-2 shots of Espresso. It's called a Red Eye, or a Shot In The Dark.

Not as out of the ordinary: butter. I prefer grass fed cow's butter.
Ah yes, it's called Bulletproof, if I'm not mistaken. At least the one I tried making I had to first make the coffee, then quickly put it in a mixer with a dash of butter. Surprisingly nice! 🙌
I think Bulletproof coffee goes a step further and adds some kind of oil as well. I've seen it made with coconut oil and butter. I've never blended it either. When I add butter, a lot of it floats on the top, which adds some changing flavors as you drink off the top.
MCT oil.

I use honey to sweeten my coffee. Sometimes I'll add some Butterscotch Schnapps if its a cold winter.
I add either of these two, if I am feeling fancy:
- Passion Fruit syrup (10ml or something); or
- Guava Juice (1 shot)
Tropical, interesting!
You really should try passion fruit syrup.
When you sip it, you first taste the sourness of passion fruit and then as aftertaste you get the flavour of coffee.
It's really something!
I heard some part of Northern Italy they add red wine to their coffee.

I'll add whiskey, candied sugar and whipped cream to a cup of hot drip coffee. Sugar and whipped cream can be skipped.
Or vodka and kahlua in a double espresso.
What's candied sugar?

Honey is definitely my favorite addition to hot, black coffee. A shake of cinnamon or nutmeg is also very good.
Taking inspiration from cocktails? An Expressed orange peel in your coffee will blow your mind. Chocolate, walnut, orange, or some other compatible cocktail bitters will also amp up some coffee.
Very interesting, love me some orange peel in my rum from time to time, so could defo see myself trying it in coffee too.
I like my coffee like I like my women, caffeinated, highly caffeinated. And room temperature. But like a room that's not too hot, not too cold.
A splash of fernet
Maple syrup 🍁 started one day when we ran out of simple syrup and never went back.
Ohh I actually have some of that I could totally try, even sounds good too! Although, sadly, it's not actual good authentic Canadian maple syrup :{
A splash of Cointreau.
That bit of orange adds complex flavors to good coffee.
Pineapple juice.
A mild cigar.
